One of the things we love best about hot air fryers is the way they let us enjoy our favorite snacks without they unwanted calories. That's why we were so excited when our friend Noelle at Opera Singer in the Kitchen created a new recipe for air fried chick chilaquiles for the Avalon Bay Air Fryer. Chicken chilaquiles is a Mexican dish made with cheese, shredded chicken, and sour cream. Normally the oil in the chips makes it hard to eat without feeling guilty, but an Avalon Bay Air Fryer cuts the calories in half so we can eat as much as we want.
Air Fryer Chicken Chilaquiles Recipe
- One 8-Ounce Chicken Breast
- One or two Bay Leaves
- One 10-Ounce Can of Rotel Tomatoes
- One 14.5-Ounce Can of Diced Tomatoes
- One Small Yellow Onion
- 1/2 Poblano Pepper
- 3 Garlic Cloves
- 10 Corn Tortillas
- 4 Tablespoons Mexican Cotija Cheese Or Feta Cheese, Crumbled
- Red Onions, Sliced
- 4 Tablespoons Sour Cream or Crema
First, boil the chicken for 20 minutes in a small pot with the bay leaves. Then remove and shred. Next, create the sauce by mixing the tomatoes, yellow onion, poblano pepper, and garlic in a blender. Empty the sauce into a small pot, bring it to a boil, and then let it simmer for 10 minutes. Salt to taste. Cut the tortillas into diamond slices. Place half of them in the air fryer food basket. Sprinkle them with olive oil and toss. Once they're evenly coated with oil, salt and toss again. Set the heat to 400°F (392°F in the Avalon Bay 100 Series Air Fryers) and cook for 10 minutes or until crispy. Repeat with the rest of the tortillas. Empty the tortillas into a small bowl and cover them with the sauce, chicken, cheese, and sour cream. Garnish with red onions and enjoy!
