Cheesecake ice cream
- 8 oz cream cheese, softened
- 1 cup milk
- 1 tablespoon fresh lemon juice
- 3/4 cup sugar
- 1/8 teaspoon salt
- 1/2 cup heavy cream
Put the cream cheese, milk, lemon juice, sugar and salt in a blender and mix until smooth. Pour into a bowl and stir in the cream. Freeze in your ice cream maker according to manufacturer’s directions.
While your ice cream is freezing, you can make the strawberry sauce that will make this dessert truly delectable.
Strawberry Swirl Sauce
- 1 pound strawberries,
- ¼ cup sugar
- 1 teaspoon fresh lemon juice
Rinse, hull and slice the strawberries. Stir in the sugar and let them sit at room temperature for an hour or more. When the strawberries have softened, mash them with a fork until they reach the desired consistency. (For a smoother sauce, you can puree the strawberries in a food processor and strain the seeds.)
When the ice cream is finished, transfer it into a container and spoon the strawberry sauce over the top. Gently swirl the strawberries into the ice cream. Cover and freeze for at least two hours before serving.
