The Best Way to Cellar Beer

Beer needs three things to age well: darkness, coolness, and consistency.

Darkness. It’s even more important for beer than it is for wine. It doesn’t just keep the chemical processes from proceeding too fast, but it keeps the beer from skunking. Coolness. Just like wine, beer responds to heat. For example, at 55°F the stale, cardboard flavors created by oxidation are masked by the sweet flavors produced by the amino acids and Maillard intermediates. Raising the heat increases oxidation faster than the amino acids and Maillard intermediates can keep up, ruining your beer. Never cellar beer beyond 50°-55°F.

Consistency. Before refrigeration, the only way to store beer at stable temperatures was in a cellar – hence “cellaring.” But underground cellars were far from foolproof. Temperatures rose in summer and fell during winter, which made it hard to keep flavors balanced.
